Egg Tuesday – Open face Mexican Omelet

Happy Tuesday, I hope this finds you well. Check out the attached video for a quick, simple and super delicious open face Mexican omelet (recipe below). A quick and easy way to start your morning right and get the energy you need for the rest of the day. Have a wonderful and tasty week!

Open face Mexican Omelet

Yield: 1-2 portions. 10 minutes to make.

3 large eggs

3 Tb water

Pinch of salt

1 Tb butter

1/2 tsp dried oregano (optional)

½ tsp cumin, ground or whole (optional)

2 Tb favorite salsa

2 Tb Mexican shredded cheese blend

Whisk the water, eggs and salt in a bowl and set aside.

In a medium non-stick skillet over medium heat add the butter, the oregano and the cumin. As soon as the butter is melted and you smell the aroma of the cumin/oregano add the egg. Paint the pan as if you were going to make and omelet. Keep the egg spread out evenly as you are going to leave it completely flat.

Once the egg is almost set add the salsa and then the cheese.

Turn off the heat once the egg is set. Slide onto a plate and serve.

Optional: Crush a few corn tortilla chips on top and place the pan under a broiler for a minute to get the cheese bubbly and golden.
