Egg Tuesday – The magic of Meringue!

As you know I get pretty excited about the lush, sunshine yellow, light creamy pillows of scrambled eggs, baked eggs, frittatas and omelets. I also get just as excited about egg whites! Although some people think of meringue as only a holiday classic, you can make  meringue all year round for things like ice cream sandwiches, cookies and of course pie. The KEY: Make sure to add the sugar VERY slowly and do NOT let the peaks get to stiff. If the peaks stand too tall and firm the meringue will not have any room to expand in the oven without collapsing and weeping. You never want an unhappy meringue.
