Egg Tuesday – 3 minute pan quiche

I love Quiche. The flavor and texture combination of a Quiche is a true culinary pleasure. The crust provides a rich, buttery crispness to contrast the silky smooth eggs that suspend tender bites of fresh veggies and meat. A good Quiche fills you up yet does not weigh you down. Check out my new 3-minute pan version of a Quiche. You could do this in a large pan as well for a group brunch or family breakfast.

Servings 1-2

2 large eggs

2 Tb heavy cream, half and half or milk

Pinch of salt.

1 TB olive oil or butter

½ C. bread crumbs

2 tsp dry herbs of choice

½ C. arugula or spinach

¼ C. chopped tomato or cherry tomatoes.

Whisk the eggs, salt and cream on a bowl and set aside.

Place a small NON-stick skillet over medium heat. Add the oil.

Make sure the oil coasts the entire bottom of the pan.

Once the oil is hot sprinkle the breadcrumbs across the bottom of the pan in an even layer. Sprinkle in the herbs.

Add the arugula and tomato in an even layer.

Pour in the egg mixture.

Cover the pan and cook about 3 minutes until the egg is set and reaches an internal temperature of 160 degrees Fahrenheit.

Use a non-stick spatula to loosen the egg from the pan. Slide the “quiche” onto a plate. Enjoy!

    Jeffrey, I found your blog a few weeks ago and look forward to egg Tuesday. The quiche looks like a recipe I will try this weekend. I made your egg parmagania for my husband and children and we loved it! Can’t wait til next week:)
