Egg Tuesday – Mexican Egg Salad Sandwich

As the spokesperson for the Incredible Edible Egg and America’s Egg Farmers I blog about eggs every Tuesday.

I hope you had a great Easter weekend with friends and family. I trust you ate something wonderful and that you may have some leftover hard-cooked eggs on hand. I have learned that eggs travel well. I have yet to find a flavor that doesn’t marry well with eggs. This is one of my favorites. Half a dozen hard-cooked eggs broken up with the juice of a lime, a tsp of purred chipotle chiles, a ¼ C of chopped cilantro and a pinch of salt. Mix that together with a fork until evenly combined but nice and chunky. Place a heaping spoonful of the egg salad onto two soft rolls that have been toasted in a non-stick pan with some olive oil and smoked paprika. The bun is soft but does not become gummy because of the texture from the crispy paprika toasting. The eggs are creamy, there is a pleasant smoky heat from the chipotle, a floral freshness from the cilantro and the perfect palate cleansing burst of fresh lime juice at the end. Time for the “leftovers” to take center stage and bow! Enjoy.

    It would be helpful if someone would proofread this blog. Typos and misspelings are so off-putting. It is truly worth the effort to take the time to make a good presentation here, as well as on a plate.
