The best Mexican breakfast!

Some of my best memories of Mexico are sitting on the beach in the morning with the back legs of the chair slightly sinking into the sand. In front of me on the table is the simplest, most beautiful breakfast; chiliquiles. Homemade corn tortilla chips simmered in salsa (could be tomato based or chile based). Sometimes it is served with eggs on top. It is a great texture experience. chiliquilesYou get it all in the first bite. The tortilla chips have softened and absorbed the salsa but they still have a slight crunch on the edges and a chew in the center. There is an intense freshness from the acidity in the salsa and a mild heat. The egg yolk does not let you down as it contributes its creamy goodness to the entire dish. A finishing garnish of queso fresco is always a good thing.

You don’t have to go to Mexico and you don’t have to spend a ton of time to enjoy this great dish. Buy (or make) a salsa you love, some extra thick tortilla chips and a couple eggs. Bring the salsa to a simmer in a sauté pan. Toss in the chips and stir them around to get them evenly coated. Top with a fried egg and enjoy. If it is approaching noon maybe you should have a Michalada as well! (Mexican beer on ice with lime, a splash of Tabasco and a salted rim)

Eat well, enjoy life, be happy.
