Fish tacos, simple and tasty!!

My love for Mexican food and my awesome memories of the joy of opening my first restaurant always bring me back to the fish taco. There is something about taking a simple, otherwise not so exciting fish (red snapper) and dressing it up into something taco close up

Red snapper sprinkled with salt and cumin seeds and grilled until it just separates when I lift it in the middle with the spatula. Perfectly ripe avocadoes tossed with roma tomatoes, cilantro, fresh lime juice onion and of course a little jalapeno chile! I keep a stock of habaneros, jalapenos and serranos in the freezer. Whenever I need some I grate it on the cheese grater and it comes to life as if it was just harvested! I like to leave the avocadoes in big chunks as well as the tomatoes. I slice the onions thin so that their sharpness is not overwhelming in the mouth. I try to stir the ingredients together gently as to preserve the integrity of each ingredient but allow their flavors to marry. Corn tortillas warmed up on the grill. Done. Ten minutes to heaven. One bite and your mouth is filled with all the freshness and intensity of Mexican cooking. The creamy, nutty avocado is balanced with the sharpness of the onion and the crunch of the shredded cabbage. The Lime juice is always the palate cleansing hero and the chile leaves you with just enough burn to make you feel alive and long for the next bite! The red snapper stands proud as a tender, juicy liaison to all of these flavors. Enjoy!

    Just wanted to let you know that you have fans up in Canada! We got the last season of “Next Food Network Star” on a delay and were cheering for you the entire time. Can’t wait to try some of your recipes and best of luck in the future!
