Cooking without borders, tasty lamb for the family.

Family dinner last night was quick and simple unlike the challenges on the Next Food Network Star! Just like the recipes tDSC06184hat I did on the show this one utilizes a foreign ingredient in a simple, recognizable way. Grilled lamb chops with roasted eggplant and tomato on harissa scented cous cous. Oh yeah! The key to great flavor? Hot grill, salt and pepper for the lamb chops. If you buy good meat salt and pepper is all you need! Sauté small cubes of eggplant to golden then toss in ripe, sweet, chunks of tomato. Add harissa paste (can buy it in a tube. Mixture of chilies, tomato, caraway seed, cumin, garlic. It has a nice slow, even burn with an incredible backdrop of earthy spices) to the cous cous water and you take cous cous to a whole new level! Finish off with chopped mint and a little salty, nicely acidic, mouth-watering Feta chz. This recipe is about family, passion, speed and flavor. What more could you ask for. Check out the picture.
